G&T: A SPIRITED HISTORY — AN EDUCATIONAL HAPPY HOUR
Join us in the lobby bar at The Davenport Historic Hotel for a relaxed, drop-in happy hour celebrating one of the world's most iconic cocktails: the Gin & Tonic. This educational yet approachable event explores the fascinating history behind the G&T — how it came to be, why it became one of the most popular drinks of all time, and the surprising role tonic water originally played as medicine.
We'll dive into how early tonics were used for their quinine content, how flavor took a back seat for decades, and why today's Gin & Tonics are better than ever thanks to thoughtfully crafted mixers like Fever-Tree. Paired with Fords Gin, discover how quality ingredients and balance transform a simple cocktail into something exceptional.
This event is a casual, come-and-go experience during event hours — perfect for cocktail enthusiasts, history buffs, or anyone looking to enjoy a well-made drink in good company. Proudly presented in partnership with Davenport Hotels, Fords Gin, and Fever-Tree as part of Spokane Cocktail Week.
Pull up a seat, grab a G&T, and raise a glass to history — reimagined.

This class dives deep into three cult-favorite industry drams, unpacking their origins, their legends, and the unmistakable punch that’s earned them a permanent spot behind the bar (and in bartender hearts).
We’ll break down what “bitter” actually means—from flavor profiles to cultural identity—then taste our way through these iconic pours, each with its own story of grit, tradition, and a little bit of beautiful chaos. Why do bartenders love them? Why do they keep coming back for more? And why does suffering sometimes taste… kind of good?
Expect bold flavors, strong opinions, and a hands-on lab where you’ll experiment with bitterness yourself—because nothing builds character quite like a little bite.
Come curious. Leave converted (or at least a little more bitter than before).
